This summer dish can be a starter or a side. I love to make this when I have vine ripe tomatoes picked right out of the garden- or from the farmers market. It is extra special when you can combine several types of tomatoes. I love mixing different sizes and varieties and placing them on a simple white platter.

The recipe calls for mixing the oil and vinegar together with the garlic and pouring it over the tomatoes. Full disclosure- in a mad dash of getting things ready, I have been known just to drizzle them separately on the tomatoes- things go quickly in my kitchen. Either method is fine, you can’t mess this one up. If you like it tangier, then add more vinegar.

Make this your own by throwing in some fresh basil for an Italian flare, or fresh oregano for a Mediterranean dish. Grilled peppers are also great to add to the dish.

Instructions

  1. On a plate or platter, slice the tomatoes. You can do a whole slice or cut the slices into halves or quarters.
  2. In a jar, combine oil, vinegar and garlic. Put the lid on and shake until well mixed and pour over the tomatoes.
  3. Sprinkle the chopped basil or fresh oregano over the tomatoes and add salt and pepper to taste.

  4. Let marinate for at least 30 minutes before serving.
