Lemon Thyme Vinaigrette

This is a simple favorite at my house. I grow thyme year around and it is definitely my favorite herb. Just toss the ingredients into a jar and shake well.

A simple dressing with a big punch.

INGREDIENTS
  • 1/3 cup freshly squeezed lemon juice
  • 1/3 cup extra virgin olive oil
  • 2 tbsp honey
  • 1 tbsp dijon mustard
  • 1 garlic clove, minced or grated
  • 1 tsp salt
  • freshly ground black pepper to taste

    Toss all ingredients into a jar with a lid and shake well.

    You can easily substitute your favorite vinegar for the lemon juice, red wine vinegar is amazing.
